Not many people know that the word pho actually refers to the noodles and not the soup itself. If you ordered pho with no noodles, it's no wonder she was confused.

The vegetarian pho always has noodles: it's the broth that's vegetarian. No other veg are generally included in the bowl. Otherwise, it's just like meat-based pho, served w/a side of herbs, bean sprouts, and lime wedges. Practicing Buddhists frequently fast (often on certain days of the week), so vegetarian pho is on the menu at most pho shops.

Maybe I'm confused, but I've gotten veggies instead of noodles from Lilly's and Pho Orchid express multiple times (can't remember what was in it, because it's been a while).

And I'm not talking about strictly bean sprouts.

Pretty sure Lilly's even list on the menu you can order the pho without noodles. Got to keep up with the hipster diet trends brah.

Highly possible. Lilly's does the best job of adding veggies. The bok choy is awesome!

Have you ever tried the other vietnamese favorite noodle soup? Spicy Beef noodle soup, it has a pork bone soup base rather than a beef bone soup base.

1. Dong Phuong / East
2. Pho Sunrise / Kenner (they also have the best shaken beef with rice in town and pretty descent pho)

I always enjoyed Ba Chi and Mint, but I'm far from a pho maven, so take my advice for what it's worth - not much.

I'm not a fan of star anise, but surprisingly, I love a good bowl of pho. Is it that you don't like the flavor or is it that it's just a bowl of soup so, meh?
