What is the extent of substituting rice with cauliflower?

I see it's been done in boudin and with dirty rice. Can it be used under red beans? White beans? Gumbo?

I've subbed cauliflower for potatoes but never rice. I'm interested in this.

I've subbed quinoa for rice under gravy and it was okay. I haven't tried cauliflower.

I do a cauliflower rice stir fry / fried rice. It is tasty, but it is not as tasty as white rice.

My wife makes cauliflower mashed potatoes. I pretend to hate them. But it's pretty damn good. Dunno about the rice.

When the girlfriend unilaterally decided that we were cutting out pasta and rice, we used cauliflower as a substitute for rice. It wasn't bad per se, but it wasn't good, definitely noticeable difference. Zucchini noodles instead of pasta on the other hand didn't have near the difference in quality.

Broccoli rice was the worst of the bunch though.

Cauliflower mashed potatoes are legit though, but could be because I load them with cheese and cream.

I have used it for all of the things you listed. Is it better than rice? No, but if you are cutting carbs it's a pretty decent substitute.

I use cauliflower quite a bit, I've tried the rice substitution, it was just edible, there is so much water to get rid of. I like the mashed as a sub for potatoes, my favorite are cauliflower patties.

Break down and steam a head until soft. Put in a mixer, add an egg, a cup of grated cheese, cheddar and/or parmesan, salt, pepper, blend into a lumpy batter. Spoon into patties onto parchment, bake at 450F for about 35-40 min until brown. Sometimes I make one big patty and use as a pizza crust.

Done it for it all too. Not bad at all, but not going to kid myself it is the real deal.

Pretty much sums up my experience.

A buddy of mine said he made a jambalaya with it and it took the flavor pretty well, so that may be worth trying.

Why not just eat a reasonable portion of regular mashed potatoes if you're going to do this?

I've tried it a few different ways, but I'm yet to find anything strong enough to cover the fact that it's still cauliflower and I don't like the taste of cauliflower, so I just skip it.

Cheese helps with masking the texture. Smashed cauliflower au gratin potatoes is the best way to trick yourself.
