The meatball thing also reminds me of "meatball stew".. which is basically beef meatballs cooked in a roux based gravy. It's really delicious but the chicken and andouille sausage takes it over the top. Can't wait to try it.

I'm making crawfish salad to serve on crackers and I may make a cold crawfish pasta salad with tomato, olive mix and cucumber. I think we're also going to have mini crawfish pies and BBQ shrimp for people to snack on.

Another idea for tailgate food: Meat Pies.. prefer em baked
Or you can get the spinach pies and make "Les's grass pie"

I just sent my dad to the store to get the ingredients for the meatball gumbo.
Pulled out the meat grinder for some chicken thighs....

I will when I heat some up today.
We doubled the gravy recipe and poured in the Juice from the meatball pan-then made rice and ate it like gumbo

It's a day late but buffalo chicken dip is super easy and amazing.
