I almost bought an infrared yesterday. What do you use it for?

Finding the temp of your pizza stone
Temp of oil
Temp of pan on stove

I couldnt think of enough uses to justify buying one.

All of these.

Temp of water when mixing in yeast for dough

I've also used it to read the temp of the air coming out of my ac vent and radiator temp on my car.

Global knives are my new fave. The handle & balance are small-hand friendly, unlike many others in the same price range.

Fire extinguisher--such a good idea. Reminds me I need to replace mine.

Get some decent, absorbent kitchen towels too.

Agree on the absorbent kitchen towels. I think I'd pick those out myself. Friend of mine gives me some from Williams Sonoma from time to time that are damn near moisture resistant. I thought they'd get better after some washings, but they haven't. Usually, the ones I buy there are fine. I'd probably touch the towels myself before buying. I have tons of good kitchen towels, so I just don't use the bad ones. I like to have some of the flower sack towels around as well. They're larger than kitchen towels. I think I got a supply from Target.

If you want sous vide, get the Anova circulator. Insane value at under $200:

A good set of knives (I have Henckel).
A good set of cookware (I have calphalon hard anodized and some cast iron).
A food processor (I have a decent kitchen aid. Nothing fancy).
An immersion blender (when I can't be bothered with the food processor).

That's about the extend of my needs for a kitchen. I do like some nice mixing bowls of various sizes.

Also, a mini strainer is really freaking useful to me for some reason.

For both all of that accessory stuff like mixing bowls, measuring cups, and strainers, I use the Architec brand, but that's probably because a local store sells them and my wife likes the aestetics of them. They are good quality though.

Sadly I haven't gotten to use it yet. But the recipe's in there look amazing.
I'm thinking if we happen to get a ton of Maven's in one location at the same time, I may bring a thing or two made from that book
