Trying to drop some pounds so been doing a lot of grilling lately. Need a good low carb marinade for some chicken breasts.
And while you're at it, any other grilling specialties you enjoy.

For grilling?

Ponzu sauce and sriracha mix is simple and grills up really well.

Chinese Five Spice, soy sauce, red pepper flakes, garlic, and Splenda (if you aren't doing low carb, you can use orange juice and/or honey). You could also add sherry.

If you're interested, when I get home I can look at my Penzeys Chinese Five Spice to give you amounts, but it's something like:

3 tablespoons soy sauce
2 tablespoons sherry or orange juice or red wine vinegar or apple cider vinegar. (Or Splenda)
? Chinese five spice powder
1 teaspoon honey (optional)
2 garlic cloves, minced
red pepper flakes

ETA: Never mind, that would probably be terrible for grilling. Good for stir fry, though!

Lemon juice and Tony's or similar. Longer you let it sit, the more tender the chicken gets.

Just good ole fresh rosemary and chicken go well together. I sear off boneless thighs on high heat in a cast iron skillet then finish in a preheated oven with rosemary springs. Takes about 10 minutes tops and it's good.

I don't really measure the spices, but I always do a combo of:

Olive oil
garlic powder
onion powder
pepper
smoked paprika (a good bit)
chili powder
Knorr powdered chicken base

You can add salt if you want but the chicken base usually has enough salt in it.

Mix in ziplock bag, toss in chicken and coat well- I use tenderloin or cut breasts in strips if going for low fat (thighs work well too), let marinate for at least 30 mins, throw on grill.

Panola Bloody Mary mix (liquid) for chicken breast marinade.

It is amazing grilled. Zero carbs.

I've been on a cilantro/lime/garlic kick lately. Squeeze a lime, chop cilantro fine, olive oil and a little salt. Let it sit for at least an hour, then grill. Delicious and simple

Juice of three or four limes, 1 tablespoon fish sauce, 2 tsp ground black pepper, pinch salt, 1 tsp sugar, splash of oil.....use this to coat 2 lbs boneless, skinless thighs. Marinate anywhere from a few minutes to 30 mins (no longer). Grill/broil until done.

NomNom Paleo, Curious Coconut, Mark's Daily Apple and Sarah Fragoso are good sources for low carb recipes.

I like this criollo mojo marinade variation on a low carb diet:

4 Tablespoons Olive oil
3 Shallots, finely chopped
8 cloves of Garlic, minced
1 Bay Leaf
1/4 Cup Apple Cider Vinegar
3 limes - juice (better if you can find sour oranges)
1/4 cup - fresh orange juice (better if you can find sour oranges)
1/4 cup - pineapple juice
1 teaspoon Chili Garlic sauce
1/2 Cup chopped Fresh Cilantro
1/2 teaspoon Ground Cumin
1/2 tblspoon Oregano
1/2 teaspoon Ground Black Pepper
Salt to taste
[You can cut carbs further by taking out the pineapple and orange juice]

I also like this low carb Jerk Marinade
quote:

MARINADE INGREDIENTS:
? cup avocado oil, or olive oil
½ tbsp apple cider vinegar
1 tsp sea salt
1 tsp ground allspice
2 tsp coconut sugar for paleo
1 tsp onion powder
½ tsp dried minced garlic
½ tsp ground nutmeg
½ tsp black pepper
½ tsp ground ginger
¼ tsp to ½ tsp cayenne pepper (mild or more spicy)
¼ tsp ground cinnamon
¼ tsp dried thyme leaves
2 tbsp chopped scallions * optional
