Sorry no pics......left phone at gym and SO hasn't picked it up yet.
Brined some boneless skinless chicken breast
Seasoned with garlic powder, little white pepper and smoked paprika. Browned on both sides in skillet, in avocado oil and couple tablespoons of butter.
Removed and put thick sliced Spanish onion down around the sides of skillet, along with and brussels sprouts and asparagus in the middle, then put breasts on all.
Topped breasts with a homemade spicy peanut sauce and put in 300 degree oven for 25 minutes.
Juicy and tender and the veggies were cooked perfectly.

Chicken and sausage sauce piquante made by my girlfriend (from the Northeast). I showed her the thread here and she gave it a shot. Came out good, think she's a keeper.
