I stopped south of Jackson at the Country Pleasing sausage factory and meat market earlier and bought what I thought was 2" thick USDA Prime ribeye. They're either full of shite or there's a rogue beef stamper at USDA headquarters. It was about like eating a seared Redwing. The okra n tomatoes and smashed taters were pretty good though.
