Cioppino and a chunk of Italian bread (and an over serving of Chianti) for me. Pan seared redfish filet and sautéed spinach for the beautiful and wonderfully stubborn Mrs. Otis.

A tigerfirst inspiration (see his Vidalia onion post).

Steelhead trout on the grill, which has been rubbed with the juice of a lemon, cayenne pepper, dill weed, lemon pepper, kosher salt and topped with diced garlic.

It will receive a crown of sliced thin Vidalia onions which have been quick pickled in pomegranate vinegar that has a touch of balsámic vinegar, sea salt and EVOO.

This will be topped at plating with seared scallops that have received lemon, garlic and fresh chopped parsley during preparation.

Mixed green leaf salad
Pan tumaca

I can see from the down vote progression that Paul Allen has crawled out of Lester's butt crack to join us. Here's to you, my crayon eating little buddy!

What's the deal between you and Paul Allen, if you don't mind me asking?

There's a new "southern classic chicken" in town. Think I might try it out.

1. He's a cock sucker that constantly denigrates anything associated with North Louisiana.

2. He brings zero food knowledge to the board but simply trolls at his own simple-minded speed; and

3. Did I say he was a cock sucker? Yes...yes, he is.

Dinner with a bunch of 11 yr old boys tonight - we have the choice between superior seafood or high hat. Never been to either. Where should we go?

Never been to either, but I'd hit a High Hat and start with the tamales.

MD's wife (MHNBPF) cooked crab cakes, new potatoes and asparagus.

MD's belly is very full and happy.

Saved just enough room for an oatmeal cookie.
