Yea essentially a croquette. Pulse fresh cod with onion, flour , egg, dill, s&p, baking powder. Shaped like a dumpling and panfried in butter.

Curry sauce is just a bechamel with toasted curry powder.

Nothing fancy at all. Injected it with creole butter and cooked at 350 until internal temp was 165.

I've done the mad Max turkey method before and it was really really good.

grilled pork chops with a honey balsamic glaze. Glaze was amazing.

Smothered potatoes and cucumber salad.

Buffalo style chicken thigh poppers drizzled with some sort of boursin.

Was actually pretty good.

Caught a nice box of speckled trout in Venice the other day. I made pan sautéed speckled trout sliders on Sunbeam dinner rolls with homemade remoulade, wilted spinach and one of my last fall tomatos.
