Pizza - another experiment, this time using a biga fermentation for the dough

1st - pesto sauce, slices roasted chicken tender, serrano ham, artichoke, mushrooms, red onion

2nd - red sauce, pepperoni, chorizo style sausage slices, red bell pepper, red onion

Did a rice/bean bowl with steak ala chipotle.

Ribeye/white rice/black bean/grilled onion&bellpep/pico/guac/cheese/lime juice

Cannellini beans (3lbs dry)
Stock: ( 1 roasted Chicken Leftovers; bones (cut up) and skin with a sliced
onion and 2 Qts water in pressure cooker for 1.5 hrs.
1 Qt home grown tomato puree, 1 Qt Cajun Power Shrimp Stew (1st
time used, in all ~4.5 Qts stock))
2.5 lbs smoked ham cut up.
4 lbs onion caramelized, celery, garlic, bell & jalapeno peppers,

Took 2.5 hours for the beans to cook (stove top).
That's about 1 hr longer than normal. Is it possible the Shrimp Stew
caused more needed time?. There was foaming after Shrimp stew was
added.
