1- A Woodduck Dirty Rice I made for Thanksgiving last year. Used the gizzards and livers out of a few woodies as well as the meat. First time making it.. Turned out pretty good.


13- Is shrimp ettoufee over fried catfish

16- Is pan seared mallard breast with a fig reduction thing

Photo #5 is TacoBell Mexi Pizza - My favorite part of #4 combo. And perhaps lunch tomorrow.

It's for smoking. It's a very cool set-up for smoking with a kettle grill.

That's kinda the point. Light one end and the fire slowly works it's way around the snake hitting the wood chunks every so often allowing you to smoke with realitvly low heat for an extended period of time. Makes a Weber kettle into a smoker. Works pretty damn good..

It's a method to smoke low and slow on a kettle grill. It works great. I lay out my snake than take a couple of white hot coals out my chimmy starter and place on one end of the snake.
