I would definitely eat your "pho" . The only thing I would suggest is some fresh egg noodles instead of Maruchan packs. But I doubt you'll be able to find it in your neck of the woods if you can't get rice noodles.

My brother-in-laws mom is South Korean and makes incredible pho. It's actually the only pho i've ever had. Anytime her and his aunt (who's vietnamese) comes to his house, they invite us over for Pho, egg rolls, etc... and it's all fantastic. I need to sit with them and watch how they make it. Everytime i've had it, they used beef or pork in the broth. Last time they had some large beef ribs in the pot. They also sliced up some quickly seared ribeye, put it in the bowl, then poured the pho on top of that ribeye which sort of cooked it, and they usually have sliced onions, jalapeno's, and cilantro to put into the bowl as well. They also use rice noodles.

I didn't just post some negative comment, I went out on the web and found a Meridian-esque photo showing all of the ingredients that makes up a pho seasoning packet laid out. Then I found a premade version like his chicken broth granuals that he could simply buy off the Internet to make pho.

That's a quality post, but I see that at least 7 people don't know enough about what makes a good post to be a decent judge.

ETA: I even tried to take a photo of my spice packs, but it out crappy.

It's a delicious looking soup. Pho and Ramen it is not, but too the casual "round eye" one would never know the difference. I would certainly eat it.

If you had Pho, they would have used beef bones. If they used pork bones you ate something similar to Pho called Hu Tieu.
