Wagyu brisket on a Yoder pellet smoker

After I was able to practice with a few choice and prime briskets, I tried my hand at a Wagyu packer brisket recently on my Yoder pellet smoker. I started the temperature at about 205 and left it there for about 10 hours then brought it up to 225 for the rest of the cook. I split the flat and point after about 12 hours and made burnt ends out of the point. I let the flat go about another 30 minutes to an hour and let it rest for a couple hours before slicing. The results came out very tasty. I think overall the price of the Wagyu is a bit tough to swallow, but if it's a good occasion, I think it's worth it.

last Wagyu anything i had was $65 for 8oz....

i dont want to know what you paid for this piece of meat..

Ha ha. It wasn't cheap but it wasn't crazy expensive either. It was $12 per pound

It was about a 12 pounder. Definitely not something for everyday eating. Apparently a lot of the competition guys have started using Wagyu to increase their chances of winning.

Nice looking piece of meat. I've smoked a few Wagyus, they are super legit.

Thanks. It's a Proteak board. Got it on Amazon. I think I'm going to get another soon with the juice channel for the messier cuts.

i love smoking on my primo. I have smoked tons of prime to walmart quality briskets and i have had better results with the cheaper meat. But i do want to find some waygu and try it.
