I have been tasked with preparing deviled eggs for a Christmas party and want to do something different. Was thinking of doing them three ways. Doing a smoked salmon one with fresh dill and Capers and perhaps a traditional one. Looking for other ideas. TIA.

Had some with crab and caviar at a party last year. They were good, but not really any better than original/plain. Definitely did not think it justified the cost.

There are so many combinations you can do.

If you do the smoked salmon, I suggest adding some finely chopped red onion as well.

Jalapeno and bacon deviled eggs are also popular.

You can make one with shrimp and a dollop of remoulade sauce.

I saw a recipe this weekend where the guy pulled the yokes and made them like "normal" and then fried the egg white and then piped in the yoke in top like normal. I've never done it but it looked good!

Had some that were really good.. Cooked crispy bacon.. a couple of tablespoons of the bacon grease.. not a lot of mayo.. finely chopped green onion.. the yolk mixture was more dry than moist..

Not sure about the taste but it’s visually unique.

I had some last week that had jalapenos in the filling and were smoked. They were really good, but smoking kind of makes them unappetizing to look at...unless you're into eating grey things.

My go to lately is mixing in pickled chopped jalapeños into the stuffing. Also add a little bit of the vinegar juice from the jalapeño jar instead of regular vinegar. The other things I add are mayo of course, a small amount of mustard, and celery salt.

Last batch I overdid the celery salt so next time I plan on grinding celery seeds fine and then adding salt to taste.

Edit: forgot that I have started adding a few tablespoons of softened butter into the mix. I saw that in some of the recipes online and I really like what it does for the taste and consistency.

Interesting. Was it the white part that became gray or both white and yellow?

The reason I ask is you might be able to take the yolk mixture and spread it thin on some parchment paper and smoke for a little while and then stuff into the white unsmoked halves.

He only smoked the whites then filled afterward.

I do traditional with diced up pickled banana peppers. People love them because it tastes amazing, but also because they go unnoticed in the egg due to their color, and provide an unexpected zing.

Quite labor intensive for a deviled egg.

Have a cousin who does the normal deviled eggs, but finely grinds up Ritz crackers into the mixture. Doesn't make the eggs taste like the cracker, but adds a unique buttery taste I have come to crave.

I was just about to ask the same thing. I’m looking at a bacon horseradish deviled egg recipe but have no experience with deviled eggs. If you want the recipe I had found let me know.

I saw someone caramelize some shallots and mix in the egg filling. Looked amazing.
