Unique chili recipe?

We're having a chili contest at my work. Does anyone have any ideas for a recipe that's good and out of the ordinary?

Emeril's vegetarian chili (blasphemy I know) is really freaking good.

I've brought it to potlucks before and people request the recipe almost always.

Put a lot of Cumin in it. It's the spice that smells like a Mexican restaurant. Everyone loves it.

Put a Hershey bar in it. Season it well. Gimmick chili is crap to me (though I made one with ground turkey a week ago and it was very good).

Also, grind some fresh peppers, japs, poblanos, and serranos, and use them for your heat.

Next time you're in Albertson's find the pack of White Bean Chicken chili mix.....

Buy it,
Follow the instructions on it, but grill your chicken with your desired rub.

It's a home run when done right!!!

From the Texas Beef Council:

Prep: 15 minutes
Cook: 8-10 hours (crockpot)
Servings: Serves 4-6
2-3 lbs. round or sirloin steak, cut 1/2-inch thick
1 Tbsp. vegetable oil
1 large onion
3 cloves garlic
1 tsp. salt
2-3 fresh jalapenos, seeded and chopped
1/4 cup dark chili powder or 1 tbsp. ground chipotle
2 tsp. ground cumin
1 cup dark beer
1/2 cup water

Cut the steak into 1/2-inch cubes.
In a heavy skillet, brown the beef with the onion. Drain off excess fat, add garlic and stir over medium heat another minute.
Transfer beef mixture to the crockpot. Add salt, pepper, chili powder, cumin, beer and water.
Cover and cook on low for 8-10 hours.
Stir masa or cornmeal with enough water to make a smooth paste. Stir paste into chili. Turn crockpot to high and cook uncovered for additional hour.

Serve over cornchips and top with shredded cheese and chopped onions for a traditional Texas favorite.


Masa is finely ground cornmeal used in tortilla making. It is used to "tighten" the chili and adds flavor. It can be found in the grocery store with the flour and cornmeal. If it is unavailable, you can substitute regular cornmeal.


We've had this several times and use Fritos to serve it over.

I've had something similar to that before. I think they also used chocolate and cinnamon in it too. It was actually surprisingly good.

i add a can of dark beer, a few tablespoons of baking chocolate, and 2 cups of strong coffee.

A combo of all 3?!!

I added 2 Habaneros to my last batch, and it was the perfect amount of spice for me. Also had about a tsp or 2 of cayenne

I made this but I ground it. And all here know I use the Mexene chili powder and the recipe on the back of the jar as my base and add from there. I coarse ground a whole brisket a couple weeks ago and it came out great. I also add dark kidney beans because I like them.

Had an Axis chili at a friends ranch in Junction Texas a few weeks ago made by Houston and San Angelo firemen and it had beans in it. I questioned if they would lose their Texas citizenships using beans and they just said the haters houses would burn down. They crumbled Julio's chip over it and it was a very good chili.

Went to a chili cook-off some years ago and this recipe won over 15 other versions.
And no one knew what was in the Chili until after the judging.

Nutria Chili

Recipe by: Chef Enola Prudhomme

3 tablespoons vegetable oil
2 pounds nutria ground meat
1 tablespoon + 1 teaspoon salt
1 teaspoon red pepper
1 tablespoon + 1 teaspoon chili powder
1 cup diced onion
1 cup diced green bell pepper
1 cup diced red bell pepper
1 cup tomato paste
4 cups beef stock (or water)
1 can red kidney beans (opt.)

In a heavy 5-quart pot on high heat, add oil and heat until very hot. Add nutria meat, and cook and stir 10 minutes. Add salt, red pepper, chili powder, onion and both bell peppers. Cook and stir 15 minutes. Add tomato paste and 4 cups stock. Cook 30 minutes; reduce heat to medium. Add red kidney beans; cook an additional 10 minutes. Serve hot!

Find Ostrich and grind it up. It is a dark meat with a taste and texture similar to steak.

Make my chili with it

My chili last night consisted of:

2 lb deer burger
1 lb deer sausage
2 small yellow onions
1 bell pepper
1 bigass jalapeno pepper
minced garlic
1 can crushed tomatoes
1 can tomato sauce
1 can rotel
beef stock/water
half a Sam Smith Oatmeal stout
Few heaping tbs Mexene powder
small shite load of cumin
garlic powder
little cayenne
S&P
4 tootsie rolls on account of all the Hershey bars had been s'mored


It was a fine chili, enjoyed by all
