As for the okra, meh. Many people don't think gumbo should have okra either. I don't think that's the make or break as for what something should be called.

Too many folks think they have the right to set the definition for a dish name. Definitions are a consensus, unless one person created the dish and has given it a name.

I've had black eye peas in the gumbo at Cochon. I don't see anyone blasting Link.

It's been a recognized dish for probably 150 years. Pretty sure that's a consensus.

There's no consensus that you can't put tomatoes in gumbo.

Shrimp and okra gumbo is best with tomatoes.

Sauce piquante is even tomatoier (it SHOULD be a word), in my opinion.

U use fresh peeled tomatoes. No sauce or paste. I made this like I would a normal gumbo except I usually don't use okra and have never used tomato before. Like I said I loosely based it off of a Paul Pruhdomme family cookbook. I always thought tomatoes was more of a New Orleans thing but this recipe originates from Opelousas.

How many dishes at a Link restaurant are what you would call strictly traditional? If it comes from one of his menus I'd expect it to be different and generally pretty damn tasty.

I don't like tomato in my gumbo.

I don't really care what people do or what they call it. I'm definitely not a gumbo snob because I eat gumbo extremely rarely.

But for me personally, when I think of gumbo (or jambalaya, for that matter), it's the Cajun version.

Daaaaaark roux for chicken and sausage, brown (slightly lighter) roux for seafood, brown jambalaya, etc.

you can tell this board is chock full of Cajuns because of this statement

I didn't know gumbo was served without okra and tomatoes until I got out of St. Bernard parish in my teens
