Thats a roadblock for me. I'll just turn the pot off and dump the contents on the ground for the dogs.

OK, sorry for flooding this forum with my stuff, but I can tell you, you people are fantastic.

I can tell you I am confident a quality phone app of the Jambalaya Calculator will happen. Thanks to the generous poster (who knows who he is). His screen shots look great. Hope we can work together.

I asked in the other thread and got no answer. What is the ratio for temple meat to sausage? I know the overall lbs I need but I want to test this thing out to the "T"

I do hope you'll ask some regular posters to beta test the app for y'all. I've used Ruhlman's Ratio app, the Kitchen Calc app, and a bunch of other kitchen-y apps, so I can tell you what DOESN'T work.

I agree.

My recipe comes out to about a 70/30 ratio, but I base all my ratios off of the amount of rice I'm cooking.

lbs. of rice * 1.5 = lbs. of Temple meat needed.
lbs. of rice * .6 = lbs. of sausage needed.

I cook mostly big pots (15,20,30 lbs of rice) and these ratios are a just convienient. Temple meat comes in 30 lb boxes and sausage usually comes in 3-4 lb boxes so it just makes it easy and cost effective.

Pork meat from the head of the pig. It's a favorite of the folks around Gonzales for jambalaya. If you don't shop around there, you might have troubled finding it.

Just about every grocery store in Gonzales has it or can get it. Harvest in Dutchtown has it...probably the closest to Baton Rouge.

Yeah I figured that I would have to venture over there but cant till tomorrow. How much does it normally run? Im making a 15 gallon batch which calls for 40 lbs of meat.

I usually get a pretty good deal on mine and I'm paying around $2.00/lb or about $60.00 a box. I guess retail would be $2.39 - $2.59/lb.
The price of pork has been really high this year.
