Those white sauce etoufees are probably using cream of mushroom as the base. I've cooked it like that in my lazy, inept in the kitchen early college days.

Yeah, this one actually doesn't look half bad.



That being said, why is this such a common phenomenon? Meaning "Louisiana" food made outside Louisiana that has no resemblance whatsoever to anything we would ever see or make here.

Are people really opening restaurants ostensibly specializing in a certain cuisine of which they are completely ignorant of how to prepare? Who would do such a thing and devote their livelihood to it? Or is it some sort of misguided notion of having to "appeal to local tastes"?

i've been going to shoal creek to watch the saints/lsu. Now I know to skip the red beans. The seafood gumbo is alright.

The Oyster Bar in Little Rock is awful. If I want anything South Louisiana, I head to Maddie's Place or Faded Rose. Both have real poboys using Leidenheimer French bread delivered daily. The owner at Maddie's used to work at Emeril's and Faded Roses has many many Jazz Fest posters inside. And really good soft shell crab.

Oh my stars!

A long time ago before I knew any better, I ordered a "New Orleans BBQ Shrimp" app at a restaurant near Santa Rosa Beach. (I've told this story before.) What I was served was a bowl of bland boiled shrimp with bbq sauce poured over them. I think I'm scarred from it. I can't get the picture out of my mind. I sent them back. I think I got a burger which probably had spit on it, but I didn't know any better about that, either.

Some of those are pretty bad.

It's been about 5 or 6 years but my sisters friend ordered Crawfish Etouffee at Felix's Oyster Bar in NO and it was definitely made with cream of mushroom soup. It was inedible.

The Cajun Stop was actually pretty legit a few years ago. I mean the place is a fricking dump and I question how it passed health code, but it wasn't bad.

I can't believe that article got a poboy from the gumbo pot in Los Angeles and failed to mention the sliced lemons that put INSIDE the sandwich. I can even see them in the pic.

That being said, I don't see why people are surprised. It's not like the Chicago deep dish pizza you get at someplace in Louisiana is going to be a close copy of the real deal.

Used to be a sports bar in the Galleria area that had a cajun chicken sandwich. It was their regular chicken sandwich with chili powder. I tried one right after they started serving it, took two bites and got my money back and ordered their burger - they had great burgers.

I had some "gumbo" at Zeeland Street Market that was yellow and had carrots in it, with sliced smoked sausage thrown on top. It was a travesty.

I thought Shoal Creek Saloon was a Saints bar that had a Saints helmet mock up on the roof of the bar. Those red beans look absolutely disgusting.

The worst was a couple years ago when the firefighter from Chicago made jambalaya with Pepsi
