For the first time, the State Fair of Texas has pulled back the curtain early on its Big Tex Choice Awards, its annual (fried) food competition, by releasing the list of semifinalists.

Damn! Shut out again - that's 2 in a row - not a single response before my post slipped off the front page! I think I'll stop posting . . .

It's great, just expensive.

One interesting item of note: The judges base their choices solely on which food names and descriptions sound the most appealing. Therefore, coming up with an enticing name and description is part of the game.

The tasting doesn't even begin until the next round.

Well that sounds a little strange

I would try the fried shrimp boil.

Didn't make the state fair last year, but I'll have to give it a shot this time around.

It's a good time, fun for the family, but in a sense it's like heading to the casino. Bring only the money you really are okay spending.

Hint: that little dish in the OP probably costs $5-6 for a couple of bites.

It's a state fair, not a high stakes poker game

If you read the caption on the pic, the fried shrimp boil is from 2014, so you should be able to find a recipe online.

I'd taste them. Not too keen about the chunks of potatoes in them. I didn't catch whether those were pre-cooked potatoes or not. I would boil them in a little crab boil before including them.

REEEEEmoulade sauce.

The old cookbook from one of the early chefs at the Grill Room has a recipe for fried crawfish tails with crab boil in the batter. They're quite good.
