Spin-Off my Azz Whippin' Thread - what is your one favorite kitchen item

I kind of started that thread to start this thread (but she did scratch it).

What is your favorite kitchen gadget, utensil, pan, etc?

Mine is (was) the omelette pan.

But other than that, I have a carbon steel carving knife I bought at a garage sale for $1. It is German made (forget brand), razor thin, and slices meats like they are warm butter. It is about 24" long and doesn't ever have a point. It is rounded on the end (made that way). I have found it on eBay for about $200.

Got 2, first is a heavy griddle pan. Use it for pancakes, eggs, burgers, etc. Tons of surface area.

Second is my handheld juicer. I like cocktails and limes fit perfectly in there.

1) toaster oven
2) immersion blender w/ mini food processor
3) 1/4 & 1/2 sheet pans
4) silicon baking sheet pan liners

Don't really know if these are my "favorite" kitchen items but, they definitely get used the most.

Breville BOV800XL Smart Oven has replaced the big oven for everything that will fit, which is most things.

Le Creuset 4 qt enameled dutch oven.

Cuisinart 3 qt stainless steel saucepan with glass strainer lid, free from Albertsons.

Replaced my shitty knife set with a simplified setup. Love my Mac Chef's knife. Might be a tie between that and my garlic press.

Old Cast Iron. I have a few pieces from each set of grandparents.

But a (very) new favorite are some handmade Damascus knives. Someone gave them to my dad, and he doesn't cook as much anymore, so he gave them to me. One is a skinny boning knife, one is a smaller chef knife, and one is a larger chef knife.

Probably my cast-iron. It is used 4-5 times a week for steak, veggies, frittatas, burgers, chicken etc.

My dutch oven is used all fall for soups/chilis though so that would be up there

My parents got flooded in houston and won't be able to use their oven for a few months. Think this is a good buy I assume then? Can it do like 4-5 lbs chickens? If you could give it a little review I would appreciate as I think it may be a good investment for sure

My grandma’s Mouli grater that has probably grated several metric tons of Romano over spaghetti and meatballs every Sunday for decades upon decades
