Spicy and non-Spicy gumbo

Gumbo aficionados,

I have a request from my girlfriend's parents (they are from Connecticut, for what it's worth) to make some gumbo over Thanksgiving weekend. I typically make a chicken and andouille.

Unfortunately, my GFs mom has 0 spice tolerance, while everyone else (Gf, her dad and brother, and myself) are down for a spicy, properly seasoned, dish.

I'm thinking about making my roux, adding the veggies, and then portioning off a small pot for GFs mom on the side. I'll then continue cooking them separately (stock, chicken, seasoning, sausage), keeping all the hot stuff out of moms pot.

Has anyone tried to navigate these waters? Obviously, I need to put my best culinary foot forward.

Make the whole pot at the zero heat level, and put the hot sauce on the table. I make plenty of non spicy gumbo for friends and family, and it all gets eaten.

Are you leaving the andouille out of Mom's too? 'Cause often the sausage carries a lot of heat too.

A gumbo can be seasoned well and not be "spicy." I think people get that confused when they claim "Cajun" cooking.

I agree, but she is one of those people who doesn't like even the slightest bit of heat. I think any modicum of Cajun "well seasoned" will be too spicy for her

Make the gumbo without pepper using a mild smoked sausage. If you make gumbo well, it will be delicious for all. Gumbo doesn't have to hot to be good. I prefer to control the heat in my own bowl. It's darn easy to add liquid or solid pepper to an individual bowl. Don't mistake heat for flavor.

Now that I've slept on it I believe the only real answer is find a new girlfriend. Picky girlfriends moms can turn into pain in the arse mother in laws as quick as you can say til death do us part, which you just might contemplate when the new wife is telling you the spare bedroom is going to be turned into a mother in law suite so she can be closer to her grandchildren Barrington and Blythe.

Add a few habanero to the gumbo.

Heat can be flavor and if that is what you like I don't think you should change the recipe when your proposed way using two pots can work fine. You'll have to really be on top of the smaller pot because it'll be easier to screw up spice ratios. Good luck!

Seems like everyone is too touchy about cajun and "spicy" being used together.

Gumbo doesn't have to be spicy, but if everyone at the table wants it that way but one person, then yes, you would do just fine to make a separate small pot of it for her.

Just be careful with cooking times since a smaller pot will cook and reduce much faster than a big ole pot.
