Speaking of tomato sandwiches...

years ago on another message board, we had endless debates about how to make a tomato sandwich. Which is surprising because it’s a pretty simple thing.

I decided to write a little book to settle the arguments. It didn’t.

Since homegrown tomatoes are coming into season, I thought I would share it with FDB.

Warning: it is very pretentious and tongue in cheek. But at least it’s a quick read.

It's simple:

Two slices of fresh white bread, Duke's mayo, tomato slices, a few paper thin slices of sweet onion, and a healthy dose of ground black pepper.

That's all there is to it, for the perfect 'mater sandwich.

You're right about the pretentiousness of it, but I liked it.

My rule of thumb for simple meals is that since there aren't a lot of ingredients, the quality of the ingredients needs to be high. And proper procedure needs to be followed throughout the process (salting and peppering the tomatoes in this case).

My preference is Evangeline Maid bread, thick sliced tomato, mayo, and a bit of pepper. I don't think I've ever had a tomato sandwich that I didn't like. Great snack.

I prefer several stacks of thinly sliced 'maters.

and always Dukes >> any other mayo.
