Filler meat (pork or chicken) double of your sausage. 1 onion per pound of filler. Season to taste. That's my guidelines and I get plenty of requests to cook from people.

There are 2 types of jumbalaya Cajun and Creole Cajun is brown Creole uses tomato. for me and my family brown is pork chicken or game. Creole is best for seafood.
Thats the way I was brought up. I make both and most folks think I am good at it.

Sorry guys. I used Ro-Tel tomatoes. I guess it couldn't handle the green chilies.
