Damn, what kind of bread did you use? Feel like that has to be able to work, just need to figure out a more hearty bread

Toasted bread or a heavier bread might work. Maybe ciabatta.

No, but high Sodium meals really raise my blood pressure and I don't want to die in my 30's.

love the experiment!
But I have always heard you could wrap a turd in bacon and it would be good.....I guess that has been ruined by this experiment

Based on every cooking show I've watched I think that there is one solution....Deep fry it.

Perfect this dish and you could let someone use it to have a killer dish at Hogs For the Cause.

The issue is the bacon ON the bread. Bread is porous and will soak up that bacon grease like a sponge. I say smoke the cheese and the bacon then make a grilled cheese the regular way. Plenty of smoky flavor and you get crispy buttery bread.
I'm not sure what you could sub for bread if you wanted to keep your method. Maybe thin sliced parboiled potato slices?? Bacon, cheese and potatoes is always a winner.

I feel like I saw something recently on Facebook that resembled what the OP was going for. It was one of those little 30-45 second videos. They cooked theirs in a cast iron skillet, both wide sides first then used tongs to hold it and crisp the edges. I don't think there's a good way to do it in a smoker. The bacon grease has too much time to turn it into a soggy mess.
