So I've got a couple of bacon wrapped grilled cheeses on the smoker

Not sure how it's gonna turn out, but luckily I've got some ribs and thighs for backup.

Been on for about 2hrs at 250. They look great but the bacon needs to get a little more crispy. Also, I have a feeling the bread is gonna be soggy from all the bacon fat, but idk.

I'm not sure how to crisp up bacon low and slow

Maybe next time smoke the bacon for a while then turn up the heat to crisp it up a little.

Then get a cast iron skillet hot, make your sandwich, coat the outside of your bread with mayo, and cook it like you normally would

I think you're gonna have to wrench your head to the side and pull the opposite direction with your hand in order to get thru the bacon amd cause you to over sqeeze with your hand and skeet melted cheese napalm all over yourself and when you look back you're going to be holding a disintegrated blob of mushy cheese bread and floppy bacon in a 3rd degree burned hand. I'd use a plate and a fork.

well, count that as things that do NOT work. Bacon was delicious, but like predicted, the bread was a little soggy from bacon fat. It was worth a shot but pretty much fell apart when I grabbed them off the grates.
