Smoked chicken for gumbo?

Was thinking of getting a couple smoked chickens from Bergerons for a gumbo tomorrow. I've never done smoked chickens in gumbo before and was wondering if that might make the gumbo too smiley. Any thoughts are appreciated! Thanks

I've done rotisserie many times. Just pulled chicken off the bone, always comes out great.

I do this all the time. Get smoked chickens from Big Mikes BBQ in Houma - also get his smoked sausage. They debone the chickens and save the carcasses. Make my stock from this, so the whole gumbo has that smokey flavor. It is not overpowering at all.

I use smoked sausage and tasso in every pot of gumbo i make. The smoke flavor is amazing if you dont overdo it. I would imagine if you are only doing chicken and sausage that the new smoke flavor will be a pleasant change to your gumbo.

Gonna smoke ducks today for smoked duck, and andouille (with few oysters thrown in to curl at the last minute) gumbo. So yes, the smoked chicken will work.

We use smoked chicken regularly in gumbo. It complements; doesn't overpower.

Smoke our own usually over pecan.

Highly recommend using smoked chicken.

That's the great thing about gumbo. There is no right or wrong answer. You're making it, put whatever the hell you want in it.

Smoking a turkey as we speak for Christmas gumbo. Hope I don't get too drunk before it's done

I use smoked chicken and smoked turkey for gumbo quite often. Unless there is too much smoke or an odd wood is used like mesquite, it makes great gumbo.
