Sausage in seafood gumbo?

So my Game day tradition for the Bama game is to make a chicken and sausage gumbo. As an out of state tiger fan, it brings a little Louisiana to me.

However, in order to try to shake off this losing streak, I’m switching things up and giving seafood gumbo a shot. It will be my first time doing seafood, and I’m using Geauxldmember’s post as a starting point.

My question is, do y’all throw a bit of andouille in your seafood gumbo, or just go only seafood? Any other seafood gumbo tips out there?

I don’t but I’ve had it and some put andouille that I know of. To me it tastes too strong and takes away from the seafood. Just use the money you would spend on meat to buy an extra pound or two of shrimp.

If I had a good seafood gumbo with sausage from someone else what would I do? Eat the whole bowl and go back for seconds

Yes to sausage in seafood gumbo (and some nice chunks of smoked ham, too).
But I’m from the bayou where seafood is in literally everything, and no one treats it as sacred and unmixable.

My sister’s best gumbo is chicken/sausage and oyster...it is dynamite delicious. I slip a pint of oysters into my chicken gumbo, thanks to her influence.

I find that smoked sausage is too overpowering for the delicate seafood flavors. Land critters go with land critter gumbo. Sea critters go with sea critter gumbo. Unless we're talking duck and oyster, but a duck spends a lot of time in water, so I look the other way.

I do but I'll choose a mild sausage over andouille (stronger flavor that can take over the gumbo). My wife doesn't like it in her seafood gumbo so I'll alternate it in and out most times. But my Wild Dog gumbo gets everything...chicken, andouille, shrimp, oysters, crab and crawfish.

I do sometimes, put whatever you want in there. It's your gumbo, you eating it, cook it how you want. Hell sometimes I throw a can of rotel in there when I brown my onions.

I prefer seafood gumbo sans sausage; however, it won't bother me enough to not enjoy it. I would agree that andouille can sometimes overpower other more delicate flavors, such as crabmeat. If using sausage, then a more mildly smoked, kielbasa-type would be my recommendation.

I will put a couple pounds of these in a seafood gumbo if my wife isn’t eating it. I like the flavor from the fat. But if she’s eating it is crab and shrimp and I put oysters in my bowl.

As any true Louisianaian knows, sausage and tomatoes are a staple to any good seafood gumbo. Don’t let any of these baws tell you differently.

I personally like it. I don’t make gumbos often but my mom occasionally would whip a seafood gumbo and occasionally would put sausage in there and I didn’t have any complaints when she would experiment

It would be with shrimp and crabmeat

Go for it and frick the haters!!

You want a lil sausage put a lil sausage

Sausage is an awesome food.

Put a lot of oysters and oyster juice. Put them early, simmer long, letting them fall apart. Most people’s seafood gumbo tastes like chicken gumbo with shrimp in it.

In Catholic South Louisiana meatless Fridays have been a long standing tradition, even after the Church mostly lifted the rule (to my dismay). So gumbo was seafood gumbo sans sausage was served on Fridays in many homes, including mine. There is no reason you can't put sausage in seafood gumbo if you like, but to me, eating a dish in a traditional manner connects me in some small way to the past.
