Ribs sell by date

I have two packs of ribs in the back of my fridge that have a sell by date of 4-27, they are vacuum packed. They look good still, meat is all still pink. Are they safe to smoke this weekend or should I toss them?

You can always tell when pork has gone south. If it's not odd smelling I would cook them.

4/27 as in they have been in your fridge for a month? Throw them away man.

In all reality if they smell ok it will be ok. That being said, i make enough money to not have to risk it and Personally i would throw them no matter what.

Open the pack and you will instantly have your answer, pork leaves little doubt about whether it is good or not.
Honestly sell by dates are a guideline, I have bought meat well within the dates that was rancid upon opening and done like you and had some well over that was still good.
Open and take a wiff, bad pork is a smell you won't forget.

It says Sell By Date not Eat By Date. As long as they have stayed cold and don't stink like road kill I would use. Pork can stay in a fridge or ice chest that is very cold for a week with no problem.

Toss 'em, and you're lucky...it's Memorial Day Weekend which means you can find very good sales on ribs. Abertson's has them for $1.98/lb for instance.

And you are gonna cook them and cook them and cook them and then cook them some more, literally till the meat just about falls off the bone.
Ribs are not like beef steaks or even pork chops where less than well done is good. You're gonna cook the crap out of ribs just to get them tender.
And you're probably gonna salt and use a highly acidic sauce on the ribs too.
So if anything nasty lives through all that, the sell by date would be misleading anyway.

It does not matter how done they get, the heat will not destroy the toxins left behind by any bacteria. You will kill any living thing at the done temp, however the toxins left behind is what will make you shite through a screen door and not leave a stain.

When you cut the cryovac smell them they might have a gas odor to them, that's not that big of a deal. If when you take a whiff, and your gag reflex kicks in toss em!

Stick them in the oven for a couple hours and then smell your house. If your house smells good, you are good to go.
