I would buy one with an extra guard. Or one that cannot be operated without a guard.

well that's just silly.

If you want safe, get a Sweedish mandolin.
If you want ultra thin and infinite adjustments, but the chance of losing a finger tip..get a Japanese mandolin.

Borner

The Borner is excellent, just doesn't have the control settings and thinness of the Japanese style.

I got my Borner from Goodwood Hardware. They also had other brands to choose from.

You can probably find the OXO Good Grips V-Blade Mandoline Slicer at Target or Bed Bath for about $40. It was a past winner in a Cook's Illustrated equipment review.

They did a new test last year. Oxo was still recommended, but the highly recommended models were Swissmar Bo¨rner Original V-Slicer Plus Mandoline and Kyocera Adjustable Slicer with Handguard. Those are listed for about $30 and $25.

I don't use mine much. I just have a cheapo that I've had for years. Works fine. No trips to the ER yet, but I always worry when using it.

Go with this one. I have 1 that I bought from Hong Kong Market on Florida for $30. Sharp as anything and easy to clean.

Pre 1950 Gibson is OK, too. I like the curves on them. Not sure where you might find one locally, but they can be found in Nashville.

OK Serious:

Our OXO

Will do all you want, plus julienne slice, which is nice.

Comes with a holder, which I do not use and have never cut my fingers

I have several and they all work well. I ran my thumb through the waffle blade awhile back. It was to the bone and looked like a tic, tac, toe board. That took a month to heal and didn't feel very good.

I have an old French one that was a couple hundred dollars but I have a $14.00 KitchenAid that works just as well and has the guard-which I wasn't using.
