I would consider my wife a pretty serious cook. She has done some type of cooking-related activity her entire adult life from being a personal chef to owning 2 food trucks.
We are now designing our (budget) dream kitchen and we're at a cross-roads on going for gas over induction.
She has always been hardcore gas but a smooth talking saleswoman at an appliance store got her mesmerized by induction.
WWtFDBdo? I don't really have a dog in this hunt; I like gas but curious what y'all would do if you were starting from a blank slate?
I expect some passionate responses on both sides of this but because there are some really good cooks on this board i'd love to hear your thoughts.
we do already have a good set of allclad/emerilware and tons of cast iron so cookware isn't a concern for induction.
oh and for sure we're sticking with electric ovens regardless.

A good cook knows the key is temperature control.
So induction does provide better temperature control than both traditional electric and gas.
Gas simply looks cool. So cavemen trying to transition to the modern world and a more practical cooking environment can choose induction that feature ground effects - blue uplighting that reflects off the pots.
Induction also helps cooks keep a clean cooking environment. You’re not going to have baked on shite that needs to be scraped off. Just wipe down with a moist cloth and dry. We finish with a dry microfiber rag to keep it looking brand new.
I don’t see me going back to gas or even old school electric with hot burners.

I was a Sears appliance service tech for 32 years. A gas stove is very reliable with hardly no problems and cheap to repair if necessary. An induction stove top is very expensive to repair. The parts cost is very high. For my home it's gas stove for sure.

I know very little about induction, but I do know that I can cook on my gas stove when there is a power outage.

The entire OP could have been written by my buddy who had the same dilemna. He listened to the sales person and not me and went with a Bosch induction stove top.

I laugh at him every time I am at his place and he is cursing at that thing. He hates it.

I'd say gas with the option to get a standalone induction burner for $100 that you can pull out and use when needed.

When my parents were building the house I grew up in, we lived a block away in a rental house. During construction there was an ice storm. Our new house was to be all-electric. The rental had a gas stove and gas heat. All our new neighbors came by to warm up and to put casseroles in the gas oven so they could feed their families.
My mom changed the plans from electric to gas at that point.

Gas all the way. I hate using induction stoves when I stay at short term rentals. Yes, they are easy to clean, but I feel like I have more control with gas.

I like my induction, but at the time I was buying I would've had to plumb gas. Induction is nice to keep clean and control heat, but if you go that route avoid any kind of touch screen to control the temp. Sometimes leaning against the controls will turn the burner off. Steamy air from the oven and splatter from the cooking surface will do the same or make it hard to change the temperature. Sometimes it makes a little buzzing noise. These are tiny complaints and overall I really like my induction.

I would go on Amazon and buy a single burner induction burner and try it out before swapping my stove out.

One small benefit of induction that hasn't been mentioned is that the side pot handles don't get hot like with a gas stove because the heat doesn't extend out like a gas flame going around a pot.
I find the temp control on the induction is excellent. And it heats up a pot of water faster than a gas stove. Easy to clean.
Not many negatives.

I never had to have a cook top repaired in my life. Your information seems completely irrelevant.

Cooked with gas most of my life. Remodeled a kitchen that couldn’t have gas and I hate electric. Put in an induction range. Absolutely loved it. Long story about why I don’t live there anymore but if I ever renovate a kitchen again I’m putting in induction.
Such precise temps, ability to boil water in :45 seconds, cool to the touch… do it.
