Rouses has on sale and I was curious as to any recipes to cook them or would it be a waste of time and money ?

red beans

soup
roast


anything that you're going to let simmer and cook a long time

Aside from Turkey necks nothing makes a better gravy. Pork necks make an excellent stew as well. If you boil them down with some seasoning and pick the meat you can use that to make some great hogs heads cheese too. Closer to the bone the better the flavor.....

I had some pork neck rice and gravy once at a soul food place that was awesome. The waitress said she didn't know why they called it pork neck because there's not much neck bone on a pig - it's really backbone.

I was thinking about getting some to make a stock with for the next time I make red beans. Anyone have any experience with a pork stock/broth? I've never seen it in the grocery, but have seen it at one of my local butcher shops. I guess it's less shelf stable, or just not very in demand.

Buy a bunch. They do not have much meat on them. Makes a rich gravy!

I used some for a stock, but they fell apart and I worried about neck bone pieces in it as I strained it.
