I just don't get the love for pho. I like the flavor of the broth and the fresh toppings but find the meat used in it disgusting.

I agree. I usually get brisket, "raw beef" and tendon in mine. I think a good ground pasty meat would be best. Tendon goes hard

South LA has had it's Vietnamese population for a while now but no one have a shite until 10years ago when these celebrity chefs started making it trendy for us people not living in major cities. All nola had was few places on West Bank and nola east. Now places in uptown are popping up and people say "oh well it's bc of our Vietnamese population". It's b/c uptown white people are jumping onto the pho train.

While I get your point I kind of disagree with you. Yes Viet food has grown in popularity for the reason you mentioned but it's not like all these pho shops opening up around here are by hipster white kids that went to Newman. The Veit influence in the area has given NOLA the perfect foundation to have all these shops exist at the levels they do.

everybody I know has always and still goes to the wank to get their vietnamese fix... Although, I never get pho... always chargrilled pork!

I don't like tendon or tripe. I get brisket and/or flank steak and/or round steak. I prefer beef pho to shrimp, which I've had only once.

The broth is just so flavorful that it makes me happy.
