Pickled Okra

I've got way too much okra to keep just frying batches of it, and I already have more than a gallon sliced and in the freezer. There's a place downtown here that serves a piece of pickled okra in their gumbo, so I made a jar of it last night to see how I like it before making a big batch. Looking for other recipes that you like, as well as other recs for okra. I'm picking about 7-8 pieces every other day from the garden at this point. My wife heard it was great on the grill, so if you do that, give me some tips as far as seasonings.

Grilled is fantastic. Roasted in the oven also. Just brush lightly w olive oil.

But I also like it raw so ....

Love it grilled. Toss is olive oil, S&P and garlic. Maybe a dash of chili powder

They are optional

The wife sorted out our freezer the other day and our butter beans are easy to locate now. I was surprised she didn't label and draw up a map.

Ha. I meant I'm not sure if there are any in there. I cleaned it out before I moved it up here from my grandparents house. I left a bunch of newer food in there and tossed older stuff. I'm not sure what all is left at this point.

When I was younger and had more energy, I used to buy a bunch of okra in the summer and smother it down in big batches with tomatoes and put it up (in ziplocs) in the freezer. Smothered okra and tomatoes, add shrimp and eat over rice ... awesomeness! (Or for shrimp and okra gumbo, but I know how this board hates that delicious stuff.)

I was headed for the same problem but something ate most of my okra plants. Some of the stubs left behind have sprouted a few leaves so I may get regrowth but most are dead sticks about 3 inches tall. Could be deer, rabbit, squirrel, or even mouse (walked out started watering other day, lil mouse ran out to south across BIG front yard to former cow pasture now hay field next door).

Now cucumbers, those I have about 15 pounds in fridge after giving away about 1/2. That's eating cukes daily, making pickles, etc.. Found one yesterday in my watermelon vines I had mistaken as a small melon. It's 8 inches long and 9 inches circumference. Still getting a few a day averaging 6 inches long. Only 7 plants.

Mine started growing way later than everything else. I planted a ton of different stuff because I wasn't sure what all was going to grow. I had plenty of squash early on. Blackeyed peas grew well but I didn't plant enough. Broccoli and Beans didn't make it. But we spotted a cuke a couple of weeks ago and now there's about a dozen growing.

I'm sure I'll be making pickles next week. And I don't even like pickles that much. But my aunt has a good sweet pickle recipe that I'm going to use because I like that in chicken salad that my wife makes.

Update. It has been about a week and I tried the first pickled okra. It was good. A little on the salty side. I made another batch and didn't use as much salt and added some crushed red pepper and some pepper flakes.

It's excellent if you have a food dehydrated

I cut it into 1/2" slices, fill a crock pot about 80% full, add 1 med diced onion, a can of rotel, 2 TBS white vinegar, salt, pepper, 2 TBS oil and let that cook down on high for about 6-8 hrs, stirring every hour or so. I let it cool then put about 1 1/2 - 2 cups in a quart zip lock bag. That's what I use to make shrimp and okra gumbo. I made one Saturday.

I know you're looking for recipes for pickling it. I don't have any...but I'll reiterate what's already been posted. If you are looking for stuff to do with it, definitely dehydrate it. Dehydrated okra is amazing. Crispy like a potato chip. Absolutely wonderful sprinkled with sea salt.

I cracked open a Coors Banquet last night and ate the first one. Had another while finishing the beer.

I may have to finally get a dehydrator. I've always wanted to make my own jerky and dried fruits. I'm definitely going to have a ton of okra so that may be a great option. How long does it keep? I'm assuming for a good while once dried out.
