That's the way it is now...every waiter wants to work at Chris' or Jubans and make the big bucks...but if every restaurant payed a good salary that would stop the job jumping going on in the business....you get merit raises every yr. paid leave time etc....what is your advantage to move to another restaurant....like I said I am really subcontracting someone to serve me.

We have 4 restaurants in Montana where the minimum wage for servers is 6.90 an hour, and some of the better ones are paid $8. No tip credit. Our servers are very loyal and most are very hard working people. You learn to run a very tight ship. Plus we keep our servers in 3 table sections.

We might not make as much money as we could, but the turn over is minimum. I guestimate it cost $500 to train a new server.

When I worked as a waiter at a place on Decatur, the main cooks stayed coked up. When we were slammed (which was always), it had to be one of the most stressful jobs to be in that kitchen. The owners drank all day to manage, the cooks snorted, and this one guy would smoke a blunt by the side entrance before he started making salads.

Ever see the cooks at Louie's on a Saturday night? Can you imagine it being like that all day? I couldn't do it.

the beautiful pressure of insurance and lawyers...it makes doing business hypocritical.

I agree! I've always hated this!


My advice to you would be not to order a steak then.
