Need ideas for cheap, easy meals cooked on a griddle

My dad gave me a big propane griddle. He dropped it off at my work and I decided to keep it here and cook lunch the last Friday of every month for the guys that work here.

Last month I grilled hamburgers and now I'm looking for ideas on things to cook in the future. I want to do stuff that's not too expensive (like steak) but not too blah (like hotdogs).

My only ideas so far are hamburgers and sausage poboys.

ETA - I'd like to keep the cost around $5 per person or less

Pork chops. Tacos/quesadillas. Spam. Is breakfast an option? Bacon, eggs and pancakes.

Chicken breasts, quesadillas would be easy, stir-fry, patty melts, cook a bunch of shaved meat for philly cheese steaks...

Some good ideas. I'll provide a little more info:

- has to be something for lunch (breakfast isn't an option)
- has to be something that doesn't take too long. Last month I made everything in about 30 minutes.
- the people I'm cooking for are mostly welders, wrench turners, etc... they probably don't want anything TOO fancy.

Some good ideas there. I was thinking fajitas or something... cut up some chicken breast w/ onions and peppers.

I like the philly cheese steak idea too.

You could also do Teppanyaki style. Fried rice, yakisoba, grilled vegetables, Udon noodles, shrimp. Whatever. Good change of pace every once in a while.

I would like that but I'll have to ask around. I'm not sure that some of these guys have ever had Japanese food. It might scare them.

Like I said... I would enjoy this but I'm not sure about the others. I would expect a few "What in the hell is this?!" comments.

I was going to post what I think is a pretty accurate reaction that a good old boy welder with his cap on would have to Hibachi...but thought better of it.

No, I've used one for years. That's the only way I do my cheese steak. GF likes reubens. I Just googled that though! Some really nice recipes that I want to try now.

Start slow with something like pork fried rice. Then work your way up the Japanese food chain.

Agree on the fajitas...you can do breasts or thighs, plus a mess of sliced onions and peppers. A little shredded lettuce, cheese, chopped tomato, and you're in business. Line it all up and ppl can fill their own tortillas as they go down the line. If you hit a sale on flap meat, you might even swing beef fajitas at a decent price per head.

Fried rice is usually a hit--you can load it up with small bits of chicken and shrimp, plus snow peas, water chestnuts, diced onion & carrot, plus some soy & fish sauce.

But don't overlook tasty but simple stuff like grilled cheese sandwiches. Butter up a loaf or two of sliced bread, lay it out on the grill. Top bread w/sharp cheddar, a slice of tomato, and a couple strips of cooked bacon....you can crank out a dozen or so grilled cheese/bacon/tomato sandwiches in just a few minutes. Serve with coleslaw on the side, or a simple soup (when the weather cools off).

You can do quesadillas in the same way, but the round tortilla shapes don't fill the griddle as efficiently as the square slices of bread.

I'll bet some of those guys will donate some already cleaned fish, and you could easily do fish tacos for a crowd on a flattop. Tortillas, shredded cabbage, a nice salsa or spicy mayo...

Cuban Sandwiches

Consider making breakfast instead of lunch some time- eggs, bacon, sausage, pancakes, etc.

Once you get the hang of it, you will use it much more often. Especially if it's an outdoor propane one. No worries of smoking up the kitchen.
