My grandma asked me to host her birthday this weekend and I'm cooking Osso Buco for 10. I have some leftover peeled boiled crawfish. I'd like to do some app with them, but I can't think of anything. Ya'll have any ideas? TIA

That's what I'd suggest. Threeputt posted this a few years ago, and I've made it a couple times. People loved them.

Mini fillo crawfish pies

quote:

Ingredients List:

4 tablespoons butter
3 tablespoons flour
1 1/2 cups onions
1/2 cup bell peppers
1/4 cup celery
1 1/2 teaspoon salt
1/2 teaspoon pepper
3 bay leafs
1/4 teaspoon cayenne pepper
1 cup tomatoes
1/2 cup heavy cream
1 pound crawfish
2 dashes Worcestershire
Mini Fillo shells (these come in boxes of 15 This recipe can make enough for 3-4 boxes, so 45-60.)

In a large skillet melt butter over medium high heat. Add the flour to the melted butter, stirring until its incorporated. Cook about three minutes.

Add the onions, bell peppers, celery, salt, black pepper, bay leaf, and cayenne pepper. Cook the mixture, while stirring, until golden brown. Add the tomatoes and cream to the mixture and cook for 25 minutes, while stirring.

Add the crawfish and allow to simmer for two minutes before removing the pan from the heat. Refrigerate over night.

Spoon the mixture into pie shells and cook at 375 for one hour. ( i baked for only 20 minutes and it was good to go, hot and crispy)

Crawfish bread.

Hi Nabor on Jones Creek normally has crawfish cornbread as one of their hot foods on Friday. It's delicious.

This. Ive done this for a party awhile back, mixed it with saffron rice and put into shells and baked. It wasn't filo shells, rather mini pie crusts to make mini crawfish pies. They went pretty quick. I got the pie shells from Poupart's Bakery in Laf, don't know if you live in the area.

Like this baw.

This bag + butter + crawfish...let it sit overnight in the fridge. Heat up slowly on the stove and pour over some Fettuccine noodles.

Did this last weekend after we had leftover tails from a boil, came out awesome.

Make a jalapeno popper, except chop up crawfish tails and mix them in the cream cheese.

Yep. That's where I got the idea too. Every time I've made them they get demolished.

The mini crawfish pies are nice. You can also use the mini phyllo dough shells or mini puffed pastry shells. Any of those will work if you don't have access to the shells in the pic.

You can also make crawfish cardinale and do the same thing. The recipe is in the recipe book from Plantation Country. Very good.

You could do a crawfish and corn starter/app soup or a French crawfish bisque (pureed).

I personally don't like pies with rice in them. Pie crust plus rice doesn't go together for me, plus they're heavier than the one crust mini pies. You have a pretty heavy entree you're serving. I'd consider that in deciding on your app. My personal preferences.

Are you already serving a salad? If not, a crawfish remoulade would also be a nice option over some hearts of romaine, perhaps.

Crawfish bread

Make a bechamel with the Crawfish, spoon the bechamel over some English Muffins, top with some fresh mozzarella and fresh grated Parmesan, bake at 425 till the Cheese melts.
