Good to hear. What was your itinerary? Looks like you went all over France.
The mashed potatoes are a specific type of potato and half the butter by weight. They whip the shite out of them as well, which somehow doesnt make them gloppy and gluey.
My mashed potatoes know follow that general rule. So if I have 4 pounds of potato, I use 2 pounds of butter.

Oh and I so wish I had asked for the name of the port that we had. It was so good. Having the sommelier always pour your wine was awesome. Made it feel very approachable and easy to ask for recommendations.
