Calandros government street. They were not cheap.

Gonna try a fish sauce gremolata in a few with leftovers.

IDK, I guess I could have qualified my post without being condescending to the ones that preceded it. My bad.

ended up being out of fish sauce, so I chopped some capers, lemon zest, minced garlic, a little Worcestershire sauce (sub for anchovies), parsley and olive oil. the gemolata was much better this time around. thanks for the tips.

ETA: why would anyone downvote my OP? bunch of haters up in here I guess.

Somepeople just like to mess with people but never ever draw attention to down votes. It will get you more. Some random person who never posts on the FDB will read this post, see you mention downvotes and then downvote you. Best to just ignore it and act like it never happened.

If your going to make a million dollar dish serve it with Mushroom Risotto to make it 2 million dollar meal! Of course a nice Pinot makes it a 3 million dollar meal!

Vegans?

Really nice job. The shanks are beautiful and your oven is so clean.

Did this tonight. Only changes: didn't strain the sauce, just simmered it down on the stove. And, added some basil to the sauce. I used local free range pork shanks from the farmers market. $8/lb was good on this cut I thought?

The basil was key IMO and made all the difference. After dinner, I thought a touch of fennel would also be appropriate here.
