My roommate and I signed up for a costco membership, figuring we could shop together and split the stuff and save money.
We've been once in 2 months. It's just too much bulk for anything but families. Want chicken thighs? 6.5 bag. Want pre-formed burger patties? 5lb bag. Then all you're eating for the next month is god damn chicken thighs and burgers.
It was cheap, though

We've had a Sam's membership forever. Diapers, formula, meat, dog/cat food, wine/beer, bread, and even some electronics and tire purchases over the years add up. Bought a car battery for my wife's van there a few months ago. It was only about $6 cheaper than other places, but I needed some other items anyways. And their TP is decent. I bought like a 45 roll box, and they're all wrapped in paper. I have a stash in the basement. I buy it twice a year. Same with paper towels.
But back to the original question, the meat is pretty good. We buy the 5 lb packs of 90% lean ground beef once a month. I cook it all in the electric skillet, and then use a pound in some dish right away, and freeze the rest in 1 lb increments. I just pull it out and toss it in a medium heat pan and it thaws out, then add the spaghetti sauce, chili fixings, hamburger helper or whatever else we're cooking to it. I've bought ribs there and they turn out great. We used to stock up on frozen chicken breasts but the Sprouts markets that have opened up have really good fresh chicken cheaper than frozen.

I find the New Orleans Costco choice steaks are really high quality for choice. The strips have nice marbling. I was surprised by the quality. The prime beef is usually as much as prime at Dorginacs or Rouses, but average in terms of quality. I prefer to buy my prime meat at a local place unless it is on a great sale at Costco.
I also buy organic chicken in bulk there as it is considerably cheaper than at WF (same with milk and eggs).

I have 3 teenagers at home. We buy a lot of stuff from Costco. We don't have Sam's Club or BJ's here in Portland, but we have 7 or 8 Costcos, so that's a good thing.
Based on the comments, you can see that there are a lot of reasons to go to Costco. I find that the quality is very high for almost all of their products. Some of the things that we spend money on are:
* Non-perishables (TP, paper towels, etc...)
* Olive Oil
* Vanilla extract (8 bucks for a 16 oz bottle)
* Nuts (we reuse the containers for all kinds of stuff ,too)
* Cheese
* Meats
* Rotisserie Chicken (5 bucks and very big)
* Batteries
* Hearing aid batteries
* Vitamins/supplements
* Bottled water
* Coffee
* Printer ink
* Photo printing

The chicken thigh packs are great. They come 6 units to a package, 4 thighs each, which is a lot more convenient than buying some loose bulk pack and bagging them yourself. I freeze and use them up over 3 or 4 months making jambalaya, chicken soup, and fricassee, the first two of these freezing extremely well for leftovers.

They also have a good Foodsaver on sale this month. The gas alone has made the membership worth it. The Kirkland brand is known for high quality products that rival or rate higher than national brands. The Kirkland brand alcohol rates very highly against their national brand rivals. I have found that the choice meat is on the higher end of the scale than others. They had an awesome deal on Samsonite luggage the other day as well. Your mileage may vary.

As a couple of people have mentioned, their "choice" beef is easily equal to Prime at other places I have shopped. Their liquor is also obviously made by the high end distilleries. A girl from Corporate told me the Kirklands vodka comes straight from Grey Goose and is $20 cheaper than the name brand.
