Roucher's Meat Market across the river in Plaquemine. Call ahead and tell them what you need and they'll kill a pig for you...literally.

If you don't mind me asking, how much?

I want to try it out first before I serve on a Friday night to people.

On phone but the recipe I am trying is from BBQ pit boys pork belly bites. Found it on YouTube and Facebook. If anyone has tried it, let me know.

When you say "whole pork belly" you mean a full "belly" not the sections usually sold in stores that end up being about 5 or 6 lbs. A whole belly is going to be about 12+ lbs.

That said, why do you need it whole if you will be cutting it up into small pieces? Seems like if you need the quantity, just buy 2 (or more) sections.

when Costco has pork belly, note they have it with the skin removed.

When I make cracklin, I usually pick up the pork belly from Restaurant Depot in NOLA, but they don't always have it.

right

Costco in NOLA sells it cut length wise, like really thick pieces of bacon. All you have to do is cross cut it to make nice little nuggets. It's actually easier
