Cherries are in season in the summer. But I suppose someone might have some from the southern hemisphere right now. Maybe try Whole Foods.

Whole Foods won't have them this time of year. Fat chance you'll find em fresh right now... can you maybe use frozen once they are defrosted?

I guess that may be my only option. Unless i make it with a different berry.

I've got wild cherries all over my yard
they make a good bounce but they are a PIA to harvest and juice
are you looking to use fresh bings or rainiers?

Wild cherries are the best for bounce. I've never juiced cherries to make bounce--just wash & stem the cherries, crush lightly w/a potato masher, add sugar & booze. I always heard that leaving the stones in made for better flavor. You just have to strain/filter the bounce once it "sits" long enough.

yeah I have never heard of making bounce with bing cherries I would think they'd be too sweet. Worth a try I guess

I'd try dried tart cherries. Trader Joe's carries dried Montmorency cherries, and you may be able to find other dried sour cherries. You could also supplement the dried cherries with a bottle of the tart cherry concentrate (Knudsen's brand, definitely sold at Whole Foods).

I tried making it with Bings. It didn't work, not tart enough. If you're hell bent on using Bings, add something sour - I'd try citric powder.
