Jambalaya competitions/cook-offs

Anybody know of any jambalaya cook-offs in the very near future? I'm wanting to compete in the swamp pop music festival cook-off and would love some practice leading up to it.

You just missed the Louisiana Sportsman this weekend. There will be several I'll have to look at the ones I did last year when I get a minute. The swamp pop is a great time though. Good choice.

The winner in 2011 was actually jambalaya although it did mix meat and seafood:
WINNER AT THE 2011 JAMBALAYA COOK-OFF
This recipe, created by Chef Eugene Standfill, Chinook Winds Casino Resort, won the top honors at the 2011 Jambalaya Cook-off! Impress friends and family by cooking this winning dish!
Serves 8
INGREDIENT LIST:
2 Tbls. olive oil
3 lb chicken, diced
½ cup flour
½ cup vegetable oil
2 cups chopped onion
2 cups chopped bell peppers
¼ cup chopped parsley
1 Tbls. diced garlic
2 lbs Andouille sausage (1/2” slice)
2 bay leaves
2 tsp. chili powder
1 tsp. thyme
¾ tsp. cayenne
6 cups chicken broth
3 cups white rice
2 lb Crayfish meat
2 lb Peeled and deveined Shrimp
METHOD:
Pre-cook the chicken in olive oil; set aside.
Brown equal parts oil and flour to a nutty smell add all ingredients (except chicken, rice, shrimp and stock) and sauté for 5 minutes.
Add stock and simmer for an hour.
Add chicken and rice. Cook about 20 minutes or until rice is almost done.
Add crawfish and shrimp, cook a few minutes. Season.

IDK why he's putting roux in a Jambalaya. Never had that but to each their own.

You would be better off cooking for friends and family. They will actually get to eat the food and critique the taste. In cook offs the host usually takes the jamb to sell and no one ever really knows which is which. I find friends can be really critcal if you ask them to do so. Also some cook offs limit the ingredients. Find out what you will be allowed to work with in that particular contest. Thats my opinion. Good luck.

I disagree, friends and family don't know what the JFA is looking for. If you cook in the competitions leading up to the festival and swamp pop you'll meet plenty people that'll help you make a better competition jambalaya. Cooking in competitions is totally different than cooking for friends and family.

Just caught word that there is a jamabalaya and chili cookoff taking place at that new bar in Denham, A Pub With No Name on April 9th

They have one at Lamar Dixon April 2nd. Benefitting "Dreams come true" foundation. Would be a good place to start out. We are cooking jambalaya and boiling crawfish.

I don't think so, search south louisiana crawfish boil, craft and car show on Facebook and they should have all the information there!

Under the rules for the crawfish cook off, they have they jambalaya cook off. $50 entry, bring your own supplies, JFA rules.

True to some extent. I've cooked in lots of competitions. A few points to mention:
Not all are judged by blue shirts (JFA). So it's always different.
My family is full of folks that have cooked and won comps so this is a legit option for me
OP I can tell you all about what they're looking for if you want to start with that list and cook some at home for practice.
A competition winning jambalaya is not the best eating jambalaya. Eventually when you're cooking for your family at bday parties and things you want to just cook what you and everyone like and not what a judge would like.
Lastly, if the comp that you're cooking in doesn't have rules around the seasoning, I can almost guarantee what the winner is using and it's not their own mix.
