Now that we have the seasoning out of the way, what is your go to stock mix? Or do you just use packaged stock?

Per Kim LeBlanc, if you are using his yellow can of seasoning (8oz seasoning per 5 pounds of rice) use water only and not stock, and use no additional seasonings

I'd like to jump in on this leblancs seasoning discussion and ask, if you're going to use this as your main seasoning...do you go ahead and marinate the meats with this as well?

Also, when you say no other seasonings is needed...does this include salt, garlic powder, and cayenne?

It's not your main seasoning, it IS your seasoning. Replaces everything.

I've cooked many jams and never once done anything to the meat prior to adding my seasoning before rice. Add the entire can of leblancs when you would normally add your seasoning.

I don't marinate meats in anything, I use 8 oz seasoning per 5 pounds of rice, I add about 1/4 of the seasoning to the meat when I fry it down in the pot and the rest when I add my water

absolutely 8 oz of seasoning per 5 pounds of rice and NOTHING else

Kim suggests using 4 oz of his yellow can of creole seasoning and 4 0z of his purple can of bar b q rub, I have tried it and I like it but would not use it in competition

Just about any local grocery store in ascension parish and I know that Leblancs and Alexanders market in BR will at least carry the 8 oz cans, and maybe the quarts, the gallons are a little harder to find, I get mine directly from him and can have him leave some at my office if you want to come by and pick it up

He also has the gallons at triple s convince store on Weber City road

I spend a couple hours a week with him, super funny guy, he has given me quite a few lessons in Jambalaya cooking, I am pretty sure they sell the 8oz cans at triple s as well, if you go there get some hog head cheese, it is Kim's recipe

If by veggies you mean onions (also bell pepper and celery if you'd like) and you don't forget water and rice then yes.

It's not a trap. Although I don't know why I share this. Not like I need more people beating my arse
