the comp that you're cooking in doesn't have rules around the seasoning, I can almost guarantee what the winner is using and it's not their own mix.

1 can of Leblancs seasoning?

I've been saying I was going to try it, might give it a practice run this week. I've made the finals in a ton of competitions, but never won. I just like going out and having fun with my friends that cook.

Cooking a Jambalaya over an open fire must be a bitch.

It's fun, but it gets really really hot.

Same. It's a fun hobby and usually benefits some cause/charity. Nothing like getting up early, firing up the burner and drinking with friends and good music.

However bad you think it is...its probably worse

The heat makes your nose run uncontrollably. You can't open your eyes because of the smoke. I don't know why I continue to do it

Definitely a good starting point on the judging criteria. Not 100% applicable to all comps, but its a good starting point at least.

It works baws, I've use it a ton but I do my own seasoning. I've won a few times with my own mix but got my butt handed to me many times with guys using Leblancs.

Open fire is not too bad, different but once you get use to it then it's like riding a bike. It's a plus to have a partner that can man a fire.

Midway through cooking in the festival I tell myself I'm never doing it again. But then when I'm done and can sit down and enjoy a beer, I can't wait to do it again.

These are hard to find.

Haven't we all. Can't beat 1 can per 5 lbs. I can never remember if its a purple or yellow can.

Exactly. I know several people didn't make it through their heat. Gotta hydrate and unfortunately not with beer.

I lost my partner last year so I'm not sure I'll be participating this year. Hope I can pick someone up before then.

Mostly yellow, have to watch the purple b/c it has too much brown sugar/smoke that will over power

I'm going to reluctantly give it a try. I've never used a premix or KB. I'll still never use KB.

What year did you grad from EA baw?

It's perfect for cooking a jam. b-day party/fundraiser/wedding. I use it for that. No KB for this guy either.

1997, if you cook in comps a lot, I'm sure we've crossed paths.

I'd love a list of what they're looking for...

What is Leblancs seasoning? Where can I buy it? How much do I use?

What is KB?

Fat arse rice, paper bag color, meat flavor.

Kim Leblancs seasoning. Better than slap ya mama, Tony's ect. Available at any local store I've been to. 1 yellow can per 5lbs of rice.
