I've trimmed spare ribs into St. Louis...what to do with the trimmings?

Smoke the rib tips, the ends you cut off. The flap meat can be cubed and used in beans or chili. If I buy whole spares I smoke the tips right along with the slabs. They are usually done in a little over half the time. The make a nice app while waiting.

I cut 'em in smaller pieces and use 'em in white beans.

I've grinded the meat into breakfast sausage before. turned out great.
