When I lived in NOLA, our house didn't have AC in the kitchen. My wife asked me to make gumbo as she's never had it before (from Cali/Texas). I just laughed and explained to her we would be dead before it was finished.

I want to make it this fall! Someone point me in the direction of their favorite chicken and sausage recipe please.

Must have been in the summer. No AC in the kitchen would be a deal killer. However, I've had the AC go out when I was making it. Wasn't the most pleasant experience, but a lot of fans in the kitchen took the edge off!

The dove, great idea. The duck, stick with the farm raised you have been using. IMHO game ducks make gumbo very greasy and slimy

Gumbo, pho and chili all rock but a great chicken and sausage gumbo made from scratch can't be beat. Learning to make a roux and an authentic gumbo is one of the best things I ever taught myself. My gumbo is pretty darn good!

Yes it was in the summer. We had a big fan in there, but it was still miserable. There were a lot of good times in that tiny house, but I enjoy my air conditioned kitchen in Dallas very much.
