I will be traveling I-10 from Bammer to San Antonio next week. Where do I NEED to stop and eat? I'm looking for good boudin, cracklins, mudbugs, etc.

Billys in Scott Louisiana is all you need for boudin and cracklins.

Poche's is only a mile off the interstate in Breaux Bridge and has great lunch plates

You have to go a couples miles off the Interstate, but I think a stop in Laplace at Bailey's and Jacobs would be quick and VERY fruitful for andouille, sausage and tasso.
