How do you like your raw oysters?

I just ordered some raw oysters for the first time in 16 years. ( didn't care for them last time I had them ).

I ordered 6. Put a little squeeze of lemon and a tiny bit of cocktail sauce and it was great. I followed with a couple more half dozens and cant believe that i haven't been eating these things. I've been missing out!

I tried them with crackers and they were good but not as good.

I tried dunking them in cocktail sauce but I couldn't taste the oyster.

So I think Ill stick with a little lemon and a smidge of cocktail.

So how do you like yours?

Couple dots of tobasco on each oyster, sometimes a tiny bit of kosher salt.

Squeeze of lemon and a dash of hot sauce. I'll do a tab of cocktail if it's available but lemon and hot sauce are my go to.

Even though it's 2am, now I want some oysters.

I'll eat oysters anyway I can get them.

When raw I prefer a mignonette sauce.

I'm with Martini. Anyway I can get them. Prefer raw with cocktail sauce that is loaded with horseradish

I drive to Collins Oysters in Golden Meadow, buy some oysters, drive home, wash them with the hose pipe, ice them down, open them up, eat them straight out the shell.

I usually just use the word "dozen", but whatever works for you.

For me, it depends on the oyster. If they're gulf oysters, I'll make a cocktail sauce to dip them in. If they're something like Island Creeks at $4 per oyster, I'm not going to do anything to them so that I can savor the taste and salinity. I've had oysters on the Pacific side of Mexico the size of my fist. Any oyster I have to cut into four pieces is getting some sort of help from sauce. I can honestly say that I didn't enjoy an oyster that size. You wouldn't be able to eat it whole and when it was cut it was just sort of milky and gross.
