Crispy, but a little warm, preferably. I'll put them in a warm oven for just a few minutes. Glass of milk which has been in the freezer long enough to get a nice thin frozen layer on top is the drink of choice. Dip cookie in milk.

I want a Jacques Torres style chocolate chip cookie.....caramelized around the edges, crisp but still a little tender. Secret to that texture is an overnight rest. Yes, make the damn dough tonight and bake them tomorrow. Patience, people.

This. My wife makes a browned-butter chocolate chip cookie with sea salt that is incredible.
