Haven't seen it but Mikkeller of all breweries had a Nelson Sauvin beer back in the day that was super interesting.

So I fully believe that some great Brett and Great hops combine to make a great beer.

Did I ever send you some of my wine/saison beer? If not I have one set aside for you. It was a saison and Sauvignon blanc combo, hopped with Nelson sauvin, and then accidentally infected with Brett. Oh man that was good. Nelson sauvin hops are probably my favorite in saisons. Such a good combo.

The article was about mixing wine with a sour beer, not just the hops.

On my sour front, I tasted the two I have at the house. The one in the barrel is almost perfect, so I will read up on bottling a sour tonight and start planning that process. The other one is a little flat, so fruit will be added. I have a bunch of figs in the freezer so I may try that again. I was thinking of going straight into the primary with the fruit to decrease the O2 exposure, thoughts?

If you have brett in the mix, I wouldn't worry about oxygenation, though I don't see a reason to transfer if you can easily put the fruit in the primary. Do you have any aceto in the mix?

Question back on harvesting yeast from bottles.

Is it possible, rather than creating a starter with the dregs, to harvest the yeast by just pouring the last bit of the bottle into one of those wyeast vials, and keeping it in the fridge? Or do i need to up the cell count before i do that?

I'm sure you could if you filled up the vial the whole way, but you wouldn't have as healthy and diverse of a colony. You'd run the risk of losing some types of microbes as they die due to lack of food and get eaten by the stronger microbes in the mix.

I got drunk at home. Somebody stopped by with a growler of 9% beer while I was drinking a vodka tonic.

I had two KBS... and a Mystery Romp.

Understandable. Wayne came by the house and we opened up a couple of beers as well.

Got a brew in yesterday also. Brewed 10 gallons of an Oktoberfest that I'll be serving at a Halloween party later next month.
23 lbs of grains and 7.5 gallons of water will fit in a 10 gallon cooler if anyone was wondering

Yep. I put 23.5 pounds of grain in for our Ten FIDY clone. Had room to add more water or more grain. Might do that next time.

We came up a few points shy of our 1070 goal at 1066, but were successful in brewing the hoppiest beer I've ever made. 346 ibu's in our ipa. Pretty excited about the finished product. Have to dry hop with 8 ounces after the Vermont ipa yeast does its job.
